Skinny B...or so I Wish

Back in May I decided that I needed to change my lifestyle, so why not do it big.  In April I had just finished a half marathon, but I never seemed to lose weight.  It was probably since I rewarded myself with Chick-fil-A after my long runs but who is counting! It doesn't all balance out?  I really didn't like what I was seeing back in my pictures and realized I needed to change how I ate.  It's so hard being single and trying to cook for yourself--yes, here comes the excuses-- and it's also hard when you work all the time not to run through a drive through and grab something unhealthy.  I had met someone back in February/March that was a vegan and I thought I could take on the challenge, but I needed to wait until after I finished training. 

The process was a slow process from March through May.  I would have vegan days where I would eat one day a week vegan, and then 2 consistent days until finally the race was over.  I went cold turkey and there has only been a few weeks that I have had cravings.  It's honestly a little odd, but I know what my body is craving and once I eat it I'm completely fine.  I'm not crazy yet, I still eat bread which I know has eggs, but overall I have stuck with it and have seen great improvements.  I haven't even wanted to cheat--it really has been a lifestyle commitment.  I haven't worked out at all and I have lost up to 15 pounds in 3 months already. I can't wait to see what happens when I do make the time to workout.  What I love is I feel better.  The first month my face did break out because it was getting rid of toxins, but since then my face cleared up, I have more energy, and lost weight!  I'm not sure how long this will last, but I love it for now.

My friend LeeAnn is living in St. Louis for a few months and she saw a vegan recipe that we had to try.  I was so blessed that she went to 4 different grocery stores, brought all the food, and prepared it!  What a treat since normally I eat very plain-salad, beans, rice, pasta, veggies, and fruit!  We had Boca burgers, tofu fries, edamame, and salad.  To top it off, LeeAnn found a vegan deli down the street from my house that has treats.  Yummy, but dangerous since I haven't had sweets in 3 months.
