Happy Mother's Day

May 11-13, 2012

This year I didn't get to go home for Mother's Day, but I did miss my mom.  Everyone thinks they have the greatest mom, but I really do.  I've grown to appreciate all the small, unnoticeable things she does.  If at anytime I needed something, she would drop everything and be in St. Louis in an instance.  Here's what I love about her:  her thoughtfulness and willingness to do anything for us kids!

Here's how I spent by weekend:

Friday, May 11th:  Keith and I hadn't spent much time together this week so we just wanted to hang out!  We had symphony tickets, but decided dinner and a walk in the park was better suited for the evening.

Saturday, May 12th:  I needed to cancel out my run today by making Glazed chocolate avocado cupcakes!  Keith and I went to bike race that evening followed by dinner on the Hill.

Sunday, May 13th:  We headed to Castlewood State Park for a TOUGH hilly trail run.  This week will be exactly six months since Keith and I's first lunch date.  I decided to show him my cooking skills by cooking a dinner of black beans.  Not sure how this ended up this way, but good thing both of our stomachs are used to beans, beans, and more beans.  We had spicy black bean soup, black bean mango salad, black bean burgers, new potatoes, and peach cobber!





Everything Under the Sun

May 4-6, 2012

This weekend was a mixture of everything under the sun.  The weekend started early when I attended and played in a golf tournament with some co-workers on Friday, May 4th.  Some how my team got a huge trophy and I was told we took 3rd place.  I'm sure that was 3rd place in the worst division because there is NO way we took 3rd overall.  My best friend, Lauren, came into town with two other friends and we met up on Friday evening for dinner.  It was great seeing and meeting her two friends that she always hangs out with in KC!

Saturday, I met back up with Lauren and her friends for a quick manicure and pedicure.  Then we headed to the mall before I went to get Keith's.  Jodi is always good at spoiling everyone for our birthday, so today Paul surprised her with a birthday party at the  winery.  We went to Mount Pleasant before rushing to another party.  It was Kentucky Derby Day and Cinco de Mayo.  Keith's friends had a party for the race and then we headed to a Mexican restaurant to finish our celebration.

Sunday, Keith and I met Lauren for a quick brunch before she headed out of town.  I was so glad they got too meet since I talk about both of them all the time to each other.  The weather has been beautiful so we went to Forest Park, a few bike shops, dinner, and a movie to wrap up Sunday!   Keith got his pick at the movies and chose Avengers.  At the end of the movie he said, "My favorite was Iron Man."  I had no idea who that was in the movie so I said, "Which one was he?" He said, "The guy in the red."  I thought he was the avenger.  Clearly I didn't grow up interested in comic book heroes.  Good thing Keith is patience!
